Iddiyappam | String Hoopers | Rice Noodles


Iddiyappam is also known as Nooputt, Putumayam or string hoppers is a traditional Tamil, Kerala. It is very simple to make using three simple ingredients rice flour, water and salt. It is very tasty and can eat with any curry, dal etc, even can eat with grated coconut and sugar. It fully absorbs all the flavours of the side dish.



Ingredients

1½ cups rice flour
1½ cups water
Salt as needed



Instructions
  1. Take a vessel, pour water and bring to boil.
  2. Combine salt and roasted rice flour in another bowl.
  3. Add boiling water gradually and using a wooden spatula mix the dough. Add water till the dough comes together. 
  4. Using your hands (be careful the dough can be very hot), knead together until you get a smooth and soft dough. The dough should not be too tight and it should not be sticky also. Cover the dough with a wet cloth. 
  5. Grease the top and bottom of idli moulds. Take small portions of dough and press each portion through Idiyappam mould or Idiyappam presser onto greased idli moulds or banana leaves. ( Chekli presser can also be used alternatively) 
  6. Once the water starts boiling in the steamer, place the idli moulds and steam for 7-9 mins on medium - high flame. 
  7. Keep the steamed closed for a min or two. Transfer the cooked Idiyappam to a serving plate. Serve hot with any curry of your choice.
